The past two weeks I have slowly been realizing that a) I need to be more healthy b) cut out processed food. I have been talking to some ladies who have gone Paleo and I am going to be trying this for the next month or so. As a college student I was worried abut having to make a hot breakfast at 6 am and instead would start buying gas station crap. I decided to investigate what breakfast foods I could make ahead of time and would keep me satisfied during the morning.
It is from these requirements that “Paleo Berry Granola” was born in my kitchen this week.
1 1/2 cup of chopped walnuts
1 cup of slivered almonds
1 cup of coconut flakes
2 teaspoons of coconut oil (room temperature)
3 tablespoons of honey
1 cup of mixed, dried berries (I used bluberries and strawberries)
pinch of salt
large pinch of cinnamon (optional)
Preheat the oven to 375 Fahrenheit.
In a large bowl mix together the walnuts, almonds, coconut and coconut oil. Add in the pinch of salt and optional cinnamon, mix well. Add in the honey and mix thoroughly, slowly adding in the fruit.
Cover a baking sheet with parchment paper and spread granola evenly across the pan. Bake for 18-21 minutes or until golden brown.
Remove from oven and allow to cool for 90 minutes or whenever dry to the touch. Store in an airtight container for up to one week.
